In my personal explanation for the movie-watching at the beginning, I envision something like this -- Ray goes over after work and invites them all out. Immediately after, because Fraser and Turnbull are both still in uniform. I just love the idea of Ray going over and inviting the Canadians to a movie.
And this works well for me partly because we see Thatcher and Turnbull get closer to the 2-7 during seasons three and four -- they worked well together during Mountie on the Bounty and since. We see them celebrating with the 2-7 during Christmas.
So, by the time of Say Amen, I believe that Thatcher and Turnbull would go with Fraser and Ray to see a movie. Also, it's kinda a sneaky way to go on a date with Fraser without having to admit that he's going on a date with Fraser. Not just a river in Egypt.
Re: Hunting Season, I love Fraser's lingering glance back towards Ray at the end (after the kisses), before he starts talking with Maggie.
